Vegetarian Broccoli Soup

This is a fabulous winter soup because it is chopped full of nutrients. It is low in fat and for anyone who has a busy life this soup is very fast and easy to make.



  • 2 cups vegetable broth
  • 2 cups filtered water
  • 1 TBS olive oil
  • 1 large leek (slice the white and light green)
  • 1 TBS fresh thyme
  • 1 large head of broccoli, chopped up
  • 1 cup spinach, chopped
  • Salt and pepper to taste

How to make: In a large pot saute leeks and thyme in olive oil. Add in vegetable broth. Bring to a boil and add in broccoli. Cover and simmer until broccoli is cooked. Add spinach. Using hand mixer or transferring over to a blender, blend until smooth. Season to taste.
